For the 2025 CEBC, MONYO proudly hosted this year’s Masterclass, where Tim from Danish brewery To Øl led a deep-dive session that naturally evolved into a joyful collab brew. The result? This Simcoe Hoplager right here.
We set out to create a beer with low ABV, high drinkability, but still packing a little twist. That’s why we landed on a Hoplager, brewed with Lallemand’s brand new Diamond Lager yeast, heavily dry-hopped with a generous 8.5 g/l of Simcoe, and lagered for 30 days in tank.
The final result is a clean, crisp, and crushable lager with a bold hoppy kick — and it proudly wears MONYO’s very first painted can. Looks good, drinks even better.
